Pat steaks dry. Then, season with salt and pepper. Heat a heavy bottomed skillet over high heat, then add vegetable oil. Cook steaks for 4-6 minutes on each side for a medium rare center, then set aside to rest before slicing.
In the same skillet, add corn and warm through. Then, add a tablespoon of cilantro and season with salt and pepper.
Cook CAULIPOWER Riced Cauliflower according to package instructions.
Dice steaks into bite sized pieces.
Assemble your bowls with CAULIPOWER Riced Cauliflower, shredded lettuce, diced steak, baby tomatoes and corn. Garnish with cotija and remaining cilantro.
