Spicy(ish) Chicken Baja Bowl

Easy, veggie-loaded lunch bowl - CAULIPOWER Edition.

  • 2 tbsp lime juice
  • 1 clove garlic
  • 1 tbsp honey
  • 1/2 avocado
  • 1/4 cup greek yogurt
  • 1 cup cilantro, tightly packed
  • optional toppings: avocado, radish, tomato

Cooking Instructions

  1. Preheat oven to 425 degrees. Bake CAULIPOWER Spicy(ish) Chicken Tenders according to package instructions.
  2. While CAULIPOWER Spicy(ish) Chicken Tenders cook, make your sauce by combining lime juice, garlic, honey, avocado, greek yogurt, and cilantro in a blender and blend until smooth.
  3. Add CAULIPOWER Baja Style Riced Cauliflower to a skillet coated with non-stick spray and cook until heated through about 7-8 minutes.
  4. When CAULIPOWER Spicy(ish) Chicken Tenders finish cooking, let cool, then slice.
  5. Split Baja-Style Riced Cauliflower between two bowls. Add sliced chicken tenders and any other toppings. Then, garnish with sauce and enjoy!
