Baja Stuffed Peppers

SpecTACOlar stuffed peppers made with our new Baja Style Riced Cauliflower!
Ingredients
- 4 bell peppers, seeded and halved
- 1/2 cup onion, diced
- 1 lb lean beef, turkey, chicken, or plant based meat, ground
- 1 can diced tomatoes
- 1 tsp garlic, minced
- 3 tbsp taco seasoning
- 1/4 cup cheddar jack cheese blend, shredded
- optional toppings: avocado, cilantro, guacamole, pico de gallo, sour cream, sliced jalapeño
Cooking Instructions
- Preheat oven to 350°F.
- Place peppers in a baking dish cut sides up.
- Heat a nonstick pan over medium heat. Add onions, and cook until translucent.
- Add ground meat, and break into crumbles. Cook for about 3 minutes.
- Add tomatoes, garlic, taco seasoning and CAULIPOWER Baja Style Riced Cauliflower. Mix well.
- Cook until the beef is cooked through, about 5 minutes. Then, remove from heat.
- Scoop the meat mixture and juices into peppers.
- Cover with foil and bake for about 30 minutes.
- Remove foil, sprinkle peppers with shredded cheese, and bake for 2 more minutes, until cheese is melted.
- Add your choice of toppings and enjoy!
