Heat a large skillet over medium-high heat. Add olive oil to skillet, then, add the red onion, garlic, zucchini, bell peppers, and thyme leaves. Season with salt and pepper to taste.
Sauté the vegetables until they take on a little color and have softened slightly, around 5 minutes.
Cook CAULIPOWER Sesame Citrus Riced Cauliflower according to package instructions.
Add cooked Riced Cauliflower into the bottom of your bowls, top with the sautéed vegetables, garnish with the crumbled cheese and sliced scallions.
