Add olive oil to a pan over medium heat and cook ground beef.
In a separate pot, bring salted water to a boil and cook CAULIPOWER Linguine Pasta according to package instructions. Set aside once cooked.
Once beef is cooked, remove from pan and set aside. To the same pan add flour, dijon mustard, garlic, lemon juice, and chicken broth. Stir contents together and scrape up any brown bits on the bottom of the pan and bring to a low boil for 1-2 minutes.
Add heavy whipping cream and sun-dried tomatoes to sauce. Stir together and then add cooked ground beef into sauce.
Add loosely packed spinach to the ground beef and sauce mixture. Add salt and pepper to taste.
Combine cooked pasta to sauce. Plate, garnish with parmesan, and enjoy!
