Ingredients

  • 1 tbsp olive oil
  • 1/2 cup white onion, chopped
  • 10 pepperoni slices, quartered
  • 2 cups tomato sauce
  • 1/4 cup reserved pasta water
  • 2 Italian sausages, casing removed
  • parmesan cheese, grated for garnish
  • salt and pepper to taste
  • 10 pepperoni slices, whole
  • 1/4 cup green peppers, thinly sliced
  • 1/4 cup white onion, thinly sliced
  • 1 tbsp black olives, sliced
  • 2 mushrooms, thinly sliced
  • 1 cup mozzarella cheese, shredded
  • reserved sausage chunks

Cooking Instructions

  1. Preheat the oven to 350 degrees and bring a pot of salted water to a boil. Cook CAULIPOWER Cauliflower Linguine according to package instructions and reserve pasta water before straining.
  2. Add olive oil to an oven safe pan over medium heat and add chopped onions to the pan sautéing for 2-3 minutes until translucent. Add sausages to the pan, season with salt and pepper, then brown for 3 minutes. Remove a few large pieces (reserve for pizza toppings). Add in the quartered pepperoni and sauté for another 2 minutes. Pour in the tomato sauce and bring to a simmer.
  3. Add cooked pasta to the simmering sauce and toss to combine. If it’s too thick, add in reserved pasta water until it reaches a desired consistency.
  4. Remove from heat. Top with pizza ingredients starting with cheese, whole pepperoni slices, reserved sausage pieces, mushrooms, green peppers, onions, and black olives. Bake in the oven for 15 minutes, or until the cheese is melted.
  5. Serve warm and garnish with parmesan cheese. Enjoy!
