Lemon Pea Pancetta Pasta

Ingredients

  • 8 ounces pancetta, diced
  • 1/2 onion, chopped
  • 10 ounce bag fresh or frozen peas
  • 2 garlic cloves, minced
  • 1/3 cup parmesan, grated + extra for garnish
  • 1/2 lemon, juiced
  • salt and pepper, to taste
  • salted pasta water, to desired consistency

Cooking Instructions

  1. Sauté pancetta and onion in a pan until crisp. Add peas and garlic and sauté for 3 minutes.
  2. While skillet ingridients cook, bring a pot of salted water to a boil and add CAULIPOWER Cauliflower Pappardelle Pasta.
  3. Once Pasta is finished cooking, reserve pasta water, drain the rest, and toss into skillet with other ingredients.
  4. Stir in parmesan and lemon juice, adding pasta water until the dish reaches desired consistency.
  5. Toss ingredients together, season with salt and pepper to taste, and garnish with more parmesan on top.
