Mini Plant-based Tostada Bowls

Ingredients

  • 4 Cauliflower Tortillas
  • 1/4 cup quinoa
  • 1 tbsp olive oil
  • 1/2 lb plant-based "meat"
  • 2 tsp taco seasoning
  • 1 can black beans, drained and rinsed
  • 1/2 cup plant-based cheese, shredded
  • guacamole, for garnish
  • cilantro, for garnish
  • salsa, for garnish

Cooking Instructions

  1. Preheat oven to 375 degrees. Place 4 ramekins on a baking sheet. Spray the ramekins with cooking spray.
  2. Prepare quinoa and cook plant-based "meat". Once "meat" is cooked add black beans, stir to incorporate, and season with salt.
  3. Heat CAULIPOWER Cauliflower Tortillas according to package instructions. Then, gently add to ramekins carefully creating a bowl shape. Spray tortilla tops with cooking spray, add to oven, and bake for 10 minutes.
  4. Remove tray from oven, fill each tortilla with plant-based "meat", and sprinkle plant-based "cheese" over each bowl. Add back to oven and bake for another 12-15 minutes or until the top edges of the tortillas are browned and the cheese is melted. Remove from the oven and let stand for 5 minutes before carefully removing the tostada bowls from the ramekins.
  5. Garnish with your favorite toppings and enjoy!
