Torrie's Breakfast Tacos

  • 2 Cauliflower Tortillas
  • 2 large eggs
  • 1/2 cup spinach
  • 1/2 red pepper, sliced
  • 1/2 yellow pepper, sliced
  • 1/2 orange pepper, sliced
  • 1/3 onion, diced
  • 1/3 red cabbage, sliced
  • 1 avocado, sliced
  • 2 sprigs of parsley, minced
  • olive oil
  • salt, to taste
  • pepper, to taste

Cooking Instructions

  1. In a skillet, heat up olive oil and sauté the peppers, onions, and spinach until the peppers are browned.
  2. Remove the vegetables from the pan and set aside. Add both eggs to the skillet and scramble them. Remove the eggs from the skillet once cooked, and set aside.
  3. Place 1 CAULIPOWER Cauliflower Tortilla in the center of the skillet. Heat on high for 30 to 45 seconds and use spatula or tongs to flip the tortilla and heat on high for another 30 to 45 seconds, or until desired crispness is reached.
  4. Carefully remove the CAULIPOWER Cauliflower Tortilla from skillet with spatula or tongs and repeat the previous step with another CAULIPOWER Cauliflower Tortilla.
  5. Plate the CAULIPOWER Cauliflower Tortillas and add the cooked vegetables, scrambled eggs, red cabbage and avocado. Sprinkle the parsley on top, add salt and pepper to taste and enjoy!
