Spinach Artichoke Pizza

Football season is in full swing, and it wouldn’t be game day without Spinach Artichoke Dip! We’re taking this game day classic up a notch and making it gluten free and ON PIZZA. What could be better?!

Ingredients

  • 1 Cauliflower Pizza Crust
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1/4 cup parsley, chopped
  • 1 tbsp lemon juice + 1 tsp lemon zest
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella + 1 cup mozzarella balls
  • 1 1/2 cups artichoke hearts
  • fresh basil, for garnish
  • red pepper flakes, for garnish

Cooking Instructions

  1. Preheat the oven to 425°F. Drizzle CAULIPOWER crust with olive oil spreading minced garlic over the crust.
  2. Add parsley, garlic, lemon juice and lemon zest to a pan with oil over medium heat until aromatic. Remove from heat and let sit.
  3. Spread mixture on top of crust. Add artichoke hearts, mozzarella, and spinach.
  4. Bake according to package instructions, garnish with basil and red pepper flakes, and enjoy!
