Ingredients

  • 1 Cauliflower Pizza Crust
  • 3-4 slices of fresh mozzarella
  • Garlic, to taste
  • Olive oil, for drizzling
  • Head of romaine or iceberg lettuce, chopped
  • Cucumber
  • Bundle of green onion
  • Handful of spinach
  • Drizzle of white wine vinegar

Directions

  1. Top crust with olive oil, mozzarella, and minced garlic.
  2. Cook according to package instructions until golden and crispy.
  3. Salad base: chop lettuce of choice, cucumber, and green onion. Reserve top of green onions for later.
  4. Dressing: add top of green onions, spinach, and a drizzle of both olive oil and vinegar.
  5. Blend until creamy. Mix in salad.
  6. Slice cooked pizza, top with salad, and enjoy!
