For Béchamel sauce: Melt butter over medium heat in a large sauce pan. Add in all-purpose flour and let simmer until golden. Slowly whisk in milk and let it simmer until thick roux (about 10-20 minutes). Add a pinch of salt and nutmeg, stir for 1 minute, and remove sauce from heat.
Remove your CAULIPOWER crust from the box and the plastic wrapping, and place on a clean surface.
Spread your homemade Béchamel sauce evenly over your CAULIPOWER plain crust (and pat yourself on the back for making homemade Béchamel sauce).
Sprinkle shredded, fresh mozzarella cheese over your crust.
Slice your colorful cauliflower florets in small pieces and spread evenly over your crust. Awe at the cauli-ful beauty of it all.
Sprinkle your crust with basil, salt and pepper to taste, and bake for 12-15 minutes or until crust appears golden brown.
