In queso didn’t know, this delicious combo of CAULIPOWER Chicken Tenders and Tortillas is kind of a big ‘dilla.

Ingredients

  • 1/2 jar of 12 oz roasted red peppers, drained and chopped
  • 1 1/4 cups grated cheese (Monterey Jack is the best)
  • parsley (or cilantro), freshly chopped
  • guacamole

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Remove CAULIPOWER Chicken Tenders from freezer and cook for 14-15 minutes, flipping halfway for optimal crispy texture.
  3. Remove CAULIPOWER Cauliflower Tortillas from the pack and place in the center of a skillet.
  4. Heat on High for 30 seconds, or until defrosted on each side.
  5. Build the quesadillas by laying some grated cheese on the tortilla, and then arranging some of the chicken tenders, roasted red peppers and parsley. Top with a little more grated cheese and a second defrosted tortilla.
  6. When the tortilla is slightly crispy, carefully flip the quesadilla to the other side. Continue cooking until the second side is slightly crispy.
  7. Repeat with the remaining tortillas and fillings.
  8. Cut each quesadilla into wedges and serve.
