Cauli Greek Beast Pizza

A mouthwatering mediterranean pizza topped with wholesome veggies, spices, chicken, and bathed in olive oil with a creamy dollop of do-it-yourself tzatziki sauce. If this doesn't make you feel like you're at a table in Santorini overlooking the crystal clear blue waters of the Aegean Sea then I don't know what will!

Ingredients

  • 1 Cauliflower Pizza Crusts
  • 1 palmful plain or sun-dried tomato goat cheese, crumbled
  • 2 mediterranean chicken burgers, chopped
  • 1/2 cup shoestring carrots, finely chopped
  • 1 zucchini, peeled and chopped
  • 1 cup plain greek yogurt
  • 1 tbsp dill seasoning
  • 1/2 tsp lemon juice
  • 1/4 tsp mediterranean spices
  • 3 tbsp avocado oil
  • 1/2 cup pistachios (optional)
  • 1/4 cup of extra virgin olive oil (optional)

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Add carrots and zucchini to a large bowl. Mix in spices and 1 tbsp avocado oil.
  3. Heat 2 tbsp avocado oil in a skillet over medium heat. Then, add chopped chicken patties, and sauté until chicken is completely cooked through.
  4. Next, add veggie mix and goat cheese to chicken. Cook until ingredients are well combined.
  5. Spread chicken and veggie mixture across pizza crust, ensuring surface area is fully covered. Add pizza to middle rack of the oven, and bake for 13-16 minutes.
  6. As pizza bakes, make tzatziki by combining greek yogurt, lemon juice, and dill seasoning.
  7. Once pizza is done, top with dollops of tzatziki.
  8. Optional: Combine 1/2 cup of pistachios with 1/4 cup high quality extra virgin olive oil in a blender. Drizzle mixture over pizza and say thanks to Zeus for this amazing Greek deliciousness!
