The Low-Carb Chick Salad

This immunity-boosting salad recipe made with our BAKED (never fried) Chicken Tenders is the best cure for your winter blues.

  • 1 cup kale and spinach, chopped
  • 1/2 blood orange, sliced
  • 1/2 avocado, sliced
  • 1/2 red onion, sliced
  • 1/4 cup pomegranate seeds
  • mint, to garnish
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • 1/2 lemon, juiced
  • 1 tsp dijon mustard
  • 1 tsp honey
  • salt, to taste
  • pepper, to taste

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Remove CAULIPOWER Chicken Tenders from freezer, and cook for 14-15 minutes, flipping halfway for optimal crispy texture.
  3. While CAULIPOWER Chicken Tenders cook, assemble your salad with: kale, spinach, blood orange, red onion, pomegranate seeds, avocado, red onion, and mint.
  4. Make dressing by mixing tahini, olive oil, lemon, dijon mustard, honey, salt, and pepper.
  5. Remove CAULIPOWER Chicken Tenders from oven, let cool, slice, and add to tossed salad.
