Strawberry season meets our Chicken Tenders for the ultimate in-season, easy and nutritious lunch!
Ingredients
- 2 cups mixed greens
- 1 cup fresh strawberries, sliced
- 4 oz crumbled goat cheese
- 1/2 cup sliced almonds, toasted
- 1/4 cup balsamic vinegar
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
- salt and pepper, to taste
Cooking Instructions
- Bake CAULIPOWER Chicken Tenders according to package instructions.
- While CAULIPOWER Chicken Tenders cook, assemble your salad and dressing.
- In a small bowl, whisk together the balsamic vinegar, olive oil, mustard, and honey. Season with salt and pepper to taste.
- In a large bowl, combine the mixed greens and strawberries.
- Top with CAULIPOWER Chicken Tenders, toasted almonds and goat cheese.
- Drizzle the balsamic vinaigrette over the salad and enjoy!
