These Asian-inspired lettuce wraps with our crispy Chicken Nuggets are the perfect way to keep your meals light and tasty this January!

Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 2 tsp fresh ginger, minced
  • 1 red pepper, diced
  • 1 cup shredded carrots
  • Butter lettuce leaves
  • Green onions, for garnish
  • Crushed peanuts, for garnish
  • Sesame seeds, for garnish

Cooking Instructions

  1. In a small bowl, whisk together the soy sauce, rice wine vinegar, garlic, honey and fresh ginger.
  2. In a large skillet or wok, stir-fry the red pepper over medium heat for 5-7 minutes, or until slightly softened.
  3. While the vegetables cook, prepare the CAULIPOWER Chicken Nuggets according to package directions.
  4. Gently toss nuggets in sauce to coat evenly.
  5. Place a few lettuce leaves on each plate. Top with shredded carrots, bell pepper and chicken nuggets. Garnish with green onions, crushed peanuts and sesame seeds.
