In a small bowl, whisk together the soy sauce, rice wine vinegar, garlic, honey and fresh ginger.
In a large skillet or wok, stir-fry the red pepper over medium heat for 5-7 minutes, or until slightly softened.
While the vegetables cook, prepare the CAULIPOWER Chicken Nuggets according to package directions.
Gently toss nuggets in sauce to coat evenly.
Place a few lettuce leaves on each plate. Top with shredded carrots, bell pepper and chicken nuggets. Garnish with green onions, crushed peanuts and sesame seeds.
