Ingredients

  • 1 Cauliflower Pizza Crusts
  • 1 tbsp unsalted butter, melted
  • 1 1/2 tbsp sugar
  • 1/8 tsp cinnamon
  • 8 oz mascarpone, at room temperature
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, blackberries, raspberries), rinsed and de-stemmed
  • powdered sugar, for garnish

Cooking Instructions

  1. Preheat oven to 425 degrees. Remove CAULIPOWER Cauliflower Crust from freezer and brush with melted butter.
  2. Combine cinnamon and sugar in a small bowl, stirring until well mixed. Sprinkle mixture across crust. Place CAULIPOWER Cauliflower Crust directly on the middle rack of the oven, and bake for 12-15 minutes, or until the crust is fully cooked and golden brown.
  3. Meanwhile, combine mascarpone, honey, lemon juice and vanilla extract in a medium bowl. Mix until creamy.
  4. Remove pizza from oven and let cool.
  5. Spread mascarpone mixture across crust. Top with fresh mixed berries, and dust with powdered sugar to taste!
