Spring Green Minestrone with Parmesan Garlic Crackers

A delicious take on a classic soup, this Green Spring Minestrone Soup with Parmesan Garlic CAULIPOWER Crackers is the perfect way to welcome a new season!

Ingredients

  • 1 defrosted Cauliflower Pizza Crusts
  • ¼ cup parmesan cheese, grated
  • 5 garlic cloves, grated and minced
  • 1 tbsp parsley
  • ⅓ cup + 1 tbsp olive oil
  • 1 leek, sliced
  • 1 tbsp Italian spices
  • 1 zucchini, diced
  • 2 16 oz cartons Kettle & Fire Chicken Bone Broth
  • 2 cups kale, chopped
  • 1 cup snap peas, sliced
  • 1 can cannellini beans
  • 1 tbsp lemon juice
  • Parmesan cheese, grated
  • Salt and pepper, to taste

Cooking Instructions

  1. Preheat the oven to 425°F. Slice defrosted CAULIPOWER crust into small triangles.
  2. In a small bowl, mix parmesan, 3 minced garlic cloves, parsley, 1 tbsp olive oil, salt, and pepper. Brush each cracker triangle and place on a parchment lined baking sheet. Bake for 9-10 minutes or until golden brown.
  3. In a pot, add remaining olive oil and sauté leeks for 2 minutes then add remaining grated garlic, Italian herbs, and zucchini. Cook for another 2 minutes before adding bone broth. Bring to a boil then add kale, peas, and beans.
  4. Simmer with the lid on for 15-20 minutes. Squeeze with lemon juice and garnish with fresh parmesan. Enjoy with garlic parmesan crackers!
