On a baking sheet, toss brussels sprouts, sweet potato, olive oil, salt and pepper together to coat. Add the chicken bites to the same sheet and bake for 20 minutes flipping everything half way.
Whisk together dressing ingredients and set aside until ready to assemble.
To assemble the bowl, start with a base of kale, wild rice, the roasted veggies, chicken bites, apples, goat cheese, almonds, and drizzle with dressing. Toss together and enjoy!
