Ingredients

  • 8 gluten-free tortillas
  • 16 oz refried beans
  • 1 can enchilada sauce
  • 1 cup shredded cheese
  • 1 lime, to juice on top
  • 3/4 cup sour cream or Greek yogurt, to top
  • 1 cup pico de gallo, to top
  • 1 sliced avocado, to top
  • cilantro, for garnish

Cooking Instructions

  1. Remove CAULIPOWER Chicken Tenders from freezer and cook according to package instructions.
  2. Layer gluten-free tortillas with refried beans and CAULIPOWER Chicken Tenders. Roll up and repeat for all 8 tortillas.
  3. Spread thin layer of enchilada sauce on the bottom of a baking dish, and place enchiladas on top.
  4. Pour remaining enchilada sauce on top of enchiladas and sprinkle cheese on top. Bake in oven until cheese is melted and browned.
  5. Remove from oven, top with sour cream or Greek yogurt, pico de gallo, lime juice, and sliced avocado. Garnish with cilantro and enjoy!
