Chicken Pesto Pizza

Ingredients

  • 1 Cauliflower Crust
  • 2 cups fresh basil leaves, packed + more to garnish
  • ½ cup toasted pine nuts
  • 4-6 cloves garlic
  • 2 cups grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • 1 cup cooked chicken, sliced
  • 1 - 1 ½ cup mozzarella cheese
  • red pepper flakes, for garnish
  • salt and pepper, to taste

Directions

  1. In a food processor, combine the pine nuts, garlic, basil leaves, and parmesan cheese. Pulse until coarsely chopped.
  2. With the food processor running, slowly drizzle in the olive oil until the pesto is smooth.
  3. Add 1 cup parmesan cheese and pulse a few more times until just combined.
  4. Season generously with salt and freshly ground black pepper to taste. Set aside.
  5. Preheat your oven according to the CAULIPOWER Cauliflower Crust package instructions.
  6. Spread a generous layer of the homemade pesto sauce evenly over the crust.
  7. Scatter the sliced chicken over the pesto.
  8. Distribute the fresh mozzarella and remaining parmesan evenly over the pizza.
  9. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Slice and enjoy!
