How To Have a Paleo Party

While you don't have to follow the diet 100% of the time to reap its benefits (meaning you can sneak a glass of wine here and there), we're starting with a delicious paleo-approved mocktail because why not go all out!? Our ancestors had no choice but to forage for what's currently in season, so we're kicking off 19999 B.C. with a refreshing, peak-season watermelon cooler.


1. Paleo Watermelon Coconut Cooler

The great thing about this beverage is how versatile it is. You can swap in different accent ingredients, depending on what the rest of your menu will be: lime when you're having tropical flavors, basil or mint if you're treating guests to fresh herbs from your garden, or even hibiscus for an agua-fresca style drink to accompany Mexican dishes.

1 seedless watermelon, rind removed, chopped into uniform cubes

1 cup coconut water

Juice from 1 lime

1/8 tsp sea salt

Optional: 1/4 cup fresh mint, basil, dried hibiscus, cucumber, lemon, berries - or anything else you can think of!

Liquefy all ingredients together in a blender and serve over ice.

2. Paleo Cauliflower-Crusted Chicken Tenders with Jalepeno Peach Salsa

On our Pinterest page, we've shared a zesty jalapeno peach salsa recipe from Physical Kitchness, and it's just one option for topping or dipping our take on the classic (and kid-friendly) appetizer. Start with our Chicken Tender Recipe and pair with quick, paleo-friendly versions of picnic condiments, like sugar-free BBQ sauce or honey mustard, which is just a 50/50 mix of its already-paleo namesakes. For something meatless, brush our all-new Paleo Frozen Cauliflower Pizza Crust with ghee, fresh minced garlic and herbs, grill on medium for 12-15 minutes, slice, and you've got garlic "bread" you can dip into marinara.

2 1/2. Grilled Veggie "Containers"

For all your dips, stem and core bell peppers to use as containers. After you're done with the appetizer course, cut up the bell pepper "containers" into strips and throw on the grill for 3 - 8 minutes, lightly brushing with olive oil, salt and pepper. They can be thrown into a salad or used to top a sandwich!


3. Make Your Own Poké Bowl

Poké bowls are taking over the fast casual dining world, and your friends will be so impressed that you've made this seemingly complicated concoction at home. Make it interactive by putting all the ingredients (minus the soy, rice, and rice vinegars, if you're following paleo strictly) in separate bowls or bell peppers (see tip 2 1/2 above), allowing guests to build their own just like at a restaurant. 4. Paleo Dessert...yes, it's possible!
