Meet Antoinette, CAULIPOWER's most life-experienced fan – that we know of! Antoinette was diagnosed with celiac disease back in the 1960s and has been gluten-free for more than 50 years. That's no easy feat for an Italian mother of 5, when family traditions are founded on pastas and pizzas. Back then, there were obviously ZERO gluten-free products offered in grocery stores, and so Antoinette had to get creative in the kitchen – just like our founder, Gail. We'll have to get Antoinette's recipe for rice-based lasagne.
After moving to California, she found early options, like rice flour, at small natural grocers, but never a steady supply. Before the internet and before folks even knew what gluten-free meant, there were slim pickings of things for her to eat.
